Ingredients:
¾ cup uncooked white rice
(creamiest with short or medium grain)
2 cups milk (divided into 1
½ and ½ cups)
1/3 cup white sugar
¼ teaspoon salt
1 egg, beaten
2/3 cup golden raisins
1 tablespoon butter
½ teaspoon vanilla extract
Directions:

Cook rice using standard
method.

In saucepan,
combine 1 ½ cups cooked rice with 1 ½ cups milk, sugar, and salt.

Cook over medium
heat until thick and creamy (about 20 min).
·
Beat egg into remaining
½ cup of milk. This prevents clumping when the egg is added to the warm milk rice mixture.
·
Stir combined
egg/milk and raisins into warm milk rice mixture.
·
Cook for 2 more
minutes, stirring constantly.
·
Remove from heat
and stir in vanilla and butter.
